The kitchen makes extensive use of seasonal ingredients and traditional techniques including cooking over fire. Its menus celebrate game, meat, fish and vegetables sourced with an emphasis on quality and provenance. The restaurant combines a historic setting with contemporary cooking and polished hospitality.
